This has helped me get through some difficult times




My cinnamon Belgian waffle recipe, that is. I have nothing of interest to tell, so I'll share this recipe with you. You need a waffle iron, duh. But you can use this same recipe to make pancakes. I won't tell.


1 1/2 cups all purpose white flour
3 Tbsp. cinnamon sugar (You know how to make cinnamon sugar, don't you? Fill a sugar shaker most of the way with sugar, then add some cinnamon. Shake it up. If it's dark enough for you, then tada! If not, add more cinnamon and shake it up again.)
1 tsp. salt
1 3/4 tsp. double acting baking powder

Stir the dry ingredients up together before adding the wet ingredients.

3 Tbsp. Hazelnut oil (You can use any vegetable oil, but if you can get your hands on some hazelnut oil, this takes the recipe to a whole new level.)
1 egg
1 cup whole milk, give or take.

Stir it all up together. If it's too doughy, add more milk or a little water. If it's too thin, add a leetle more flour. Lumps are OK.

Make.

Do 'em up with syrup, whipped cream, fruit, whatever. Check blood glucose levels to see if you're in a diabetic coma.

Doug, I swear by my copy of Joy of Cooking that I got in 1985. It even has a recipe for making head cheese, for cryin out loud.

Hazelnut oil - oh man. WANT!! Wonder if it would work with apricot oil... what do you think?

I love my waffle iron - it's the big rotating kind that you get to use in hotels, know what I mean?
